That’s how easy these suckers are.
I feel like I say that about every recipe, but that’s always a big factor for me.
These were the perfect amount of heat. My husband ate 6.
They look fancy and will impress your friends at your NYE party tonight.

Ingredients:
1 package of bacon
9 – 10 Jalapeños, fresh
1 C Cream Cheese
1 C White Cheddar, shredded
1 tsp Trader Joe’s Chili Lime Seasoning
Juice of ½ Lime
Pinch of salt
Pinch of granulated sugar (coconut sugar or monkfruit sweetner work too)
- Preheat oven to 400
- Clean and cut jalapenos in half length-wise. Using a spoon, clear out the pith and seeds. Use gloves if you’re sensitive to heat.
- In a bowl, combine the cream cheese, shredded cheese, seasoning, lime juice, and salt. Taste it. Add more salt/seasoning/lime juice, if needed.
- Stuff those green slivers of heaven, but don’t overdo it.
- Now the bacon wrapping part – wrap a slice around each jalapeno stuffed beauty and tuck the ends when possible. Shoot to wrap each one where the ends would be down. Make sense?
- Place them on a cooling rack on top of a baking sheet. Sprinkle with more lime juice, some pepper, and sugar.
- Bake for 20 minutes, then broil on high for 4 minutes to get that crispy bacon heaven. Watch ‘em. Don’t let them burn.
- Allow to cool slighty, but best served while warm.
Yes, the stuffing may come out a little, but that’s okay. Deliciousness is hard to contain.
PS. Peppered bacon would be totally great with this, but my supermarket is lame and didn’t have any. Boo that man.
