• My Go-To Breakfast Smoothie

    This smoothie is one I make most often. It’s super easy, doesn’t spike blood sugar levels like others, and keeps me satiated until lunch. The best thing – it weirdly tastes like a fruity cereal.


    Ingredients:

    1/2 C. Frozen Blueberries, fresh works too

    2 Large Handfuls of Fresh Spinach – I’ll tell you my spinach trick below**

    1-1/2 C. Milk of Choice

    1 scoop of Vanilla Protein Powder of Choice

    1 scoop Vital Proteins Collagen Powder

    1 Large tbsp. Almond Butter

    1 tbsp.  MCT Oil

    Ice, optional

    Directions – Put all the ingredients into a high-powered blender and blend until smooth and creamy. This will make a large smoothie so feel free to split it among 2 to share or store.

    **Spinach trick – I buy my spinach from BJ’s, so it’s a ridiculous amount. To get the most bang out of my buck, I make spinach cubes. I blend the spinach with coconut water and freeze into molds. Then I simply grab 2-3 and use them in a smoothie. Since I have these and the frozen blueberries, I don’t add ice, but if you’re using fresh, go for the frozen water cubes.


    Can we also talk about how pretty it is? That gorgeous purple makes my heart happy.
