• Easy-Prep Tuna and Salmon Poke Bowls

     

    The best thing about poke bowls (besides how fresh and delicious they are) is how they’re so versatile. You can be as adventurous as you want. Keep it classic with salmon, avocado, and cucumber or push yourself and do tuna, jalapeno slices, and mango. Get inspiration from your local sushi places. Love a particular roll? Make it into a bowl.

    I got all of my ingredients from the sushi section at my local Wegmans. If you don’t have that luxury, try your favorite sushi place for the tuna and salmon pieces then get the rest from your local grocery. Make sure to get sushi-grade. You can’t just pick a salmon filet and call it a day. Sushi-grade goes through a special process to ensure it’s safe to consume raw. Do not, I repeat, do not ignore this. No one wants worms or food poisoning.

    Ingredients:

    Reminder – Any or all to your liking!

    1 pc Sushi-grade Tuna (about 1/3 lb)

    1 pc Sushi-grade Salmon (about 1/3 lb)

    Brown rice, cooked

    Avocado

    Carrots

    Cucumbers

    Radish

     

    Extra Fixins’:

    Edamame

    Seaweed salad

    Vegetable Gyoza

    Sesame Seeds

    Pickled Ginger

    Wasabi Paste

     

    Sauce (double):

    3 tbsp Tamari

    1 tbsp Rice vinegar

    ½ tbsp. Sesame Oil

    1 tsp Sriracha

     

    Directions:

    Make two batches of sauce and place in two separate bowls. Cube tuna and salmon into bite-size chunks and marinate separately for at least 20 minutes in the refrigerator or at least while you’re while you’re prepping the rest.

    Chop, slice, or shave your veggies to your preferred liking. There is no hard-and-fast rules here – if you want your carrots slivered, go for it. Want them diced into little orange cubes – no judgments here. Don’t want the darned things in there at all – it’s all good.

    Make your brown rice as directed on the package. You can use white or sticky, but I had brown and that’s what I used! Scoop into a shallow bowl as your base. Again, how much, if at all, is entirely up to you.

    Top with all the veggies and toppings you want! Add your marinated tuna and salmon. Sprinkle it all with sesame seeds.  Make it pretty. Eat.


    Remember, food is supposed to be pleasurable – in taste and in prep. This would be a great at-home date-night idea for when you want that sush but not the peeps. Poke bowls and Ballers, anyone?
