• Super Simple Kale Pesto

    Growing up, I didn’t even know what pesto was until high school when I had dinner at my bestie’s house. Her mom is a great cook and baker – I desperately need her to teach me how she makes pies – and eating with them was always such a treat. I honestly had no idea there were other options for pasta besides marinara or butter. Seriously. A whole new world, y’all.

    Sure, you can buy premade pesto and it’s not bad, but why not make it yourself when it’s so simple and flavorable? Plus, you’ll feel like a culinary badass being like, “Oh this pesto? Yeah I made it.” Then your guests will bow in your awesomeness and praise your kitchen skills for years to come.


    Ingredients:

    2 C. chopped kale – stems removed

    1 C. EVOO

    ¾ C. Pine Nuts

    1 ½ tbsp. Apple Cider Vinegar

    1-2 tbsp. Garlic Powder

    Pinch of salt and pepper

     

    Put it all in a food processor and whizz, whizz, whizz. Stir, taste, add more oil, garlic, apple cider (I like it zingy personally), whatever, if needed. Whizz some more. Have fun with it. Drizzle extra olive oil on top before placing in refrigerator…that is, if you don’t eat it all right away.


    What’s pesto great for? Um, everything. Pasta, yes. Mixed in with quinoa, yes. On top of grilled steak, yes. On chicken with roasted peppers and mozzarella, YES.
