Best thing – can be part of your weekly meal prep. Just make a bunch of scrambled eggs on Sunday morning and let them cool. Grab your burrito ingredients and assemble!
Breakfast burritos don’t have to be fancy. They literally can be as simple or as complicated as you’d like. And please, don’t feel like you have to make every single ingredient by hand. I used prepped fajita season chicken strips and premade potato hash.
3 Versions I Made – Classic, Roasted Veggie with Pesto, and Chicken Tex-Mex
Tortilla wraps & Scrambled Eggs, a given.
Classic:
Potato hash or diced roasted potatoes
Cooked Sausage or bacon
Shredded cheddar cheese
On the side: ketchup or sriracha
Roasted Veggie with Pesto:
Bella mushrooms
Broccoli
Spinach
Shredded Mozzarella
On the side: Premade Pesto or use mine here.
Chicken Tex-Mex:
Fajita Seasoned Chicken strips
Black beans
Canned diced tomatoes or Salsa
Seasoned rice – I added chili lime seasoning to cooked brown rice
Shredded cheddar cheese
On the side: Sour cream and/or guacamole
Wrap them tight and wrap in foil. Label and store in a freezer bag in the freezer. I recommend taking one out the night before and putting in the fridge for the morning. Unwrap from the foil and microwave until ready, around 4-6 minutes depending on your burrito thickness. If eating on the go, rewrap in the foil and head out.
These are great because they’re warm. I don’t know about you, but I am so over overnight oats and am ready for some comforting breakfasts. It’s becoming sweater weather! Woo- hoo!
